On a global roll: New Kaleido Rolls at Fashion Island

A feast for the eyes that you eat with your hands. That’s how Kaleido Rolls, new at Fashion Island’s Atrium Court, describes its offerings.
Inspired by Vietnamese rice paper spring rolls, the colorful creations use gluten-free wrapping and natural ingredients cooked from scratch and rolled fresh.
Decidedly non-Vietnamese and often surprising versions include prosciutto, falafel, corned beef and smoked salmon. “We wanted to add a little pizazz to excite the taste buds,” manager James Lau says.
According to Lau, the concept originated in the United Kingdom. The first U.S. location was in Chicago; Newport Beach is its second. Among its guiding principles: yummy goodness that makes healthful feel happy.
The menu is gluten free; half of the items are vegan. The build-a-box concept allows customers to mix and match rolls and even half rolls.
The most popular styles include the chicken Caesar and the spicy tuna. The chicken Caesar is finished with spinach and bacon, the spicy tuna with capers and parsley. Sweet chile sauce is suggested for both.
The prosciutto roll brings fresh mozzarella, arugula and pesto sun-dried tomatoes, and peanut sauce is recommended. Ingredients in the vegan eggplant roll include rice noodles, Fresno peppers, green onions, cilantro and tahini sauce.
